Neapolitan Pizza Dough
Proofing: Room temp (6-24 hrs) or cold fermenting (8-72 hrs)
Oven temp: 400 - 550°C
Baking time: 1 – 4 mins
Mixing & Kneading
For this stage, you will need:
- TSNZ Pizza Dough Calculator to determine ingredient weights
- 2 large bowls (flour & water), 2-3 small bowls (yeast, salt & sugar), 2 spoons, and scales
- Weigh ingredients accurately
- Dissolve salt in water, mix in 10% flour to protect yeast
- Add yeast, mix well
- Stir in remaining flour, mix loosely with a spoon
- Mix with fingertips, knead for 10-20 mins until smooth & elastic
- Form into a dough ball, lightly coat with olive oil
Proofing & Rising
You can proof your dough at room temp for faster results or cold ferment for enhanced flavor.
Shaping the Dough
- Place dough ball on a floured surface
- Press outward using fingertips while rotating to create 10cm diameter
- Pick up one edge, let gravity stretch the dough
- Use knuckles to gently stretch & rotate
- Once stretched, place dough on a floured pizza peel
- Tip: Before adding toppings, ensure dough isn’t sticking
Cooking
- Preheat TSNZ Wood Fired Oven to 400-550°C
- Check temp using an infrared thermometer before placing pizza
- Slide pizza onto stone, space evenly between fire & oven wall
- Turn pizza with TSNZ Turning Tool for even cooking
- Bake for 1-4 mins, depending on oven temp
